A loaf or a slice of bread may seem simple, but there is a curious complexity to the matter of bread. From geopolitical contexts via microbiological processes to multisensory experiences, whole new universes open up below each crust: Whereas bread is a product of daily life and, hence, taken for granted in the Global North, aspects of food shortages and the impact of these on social stability are only rarely addressed. An excerpt from the ongoing series of workshops BROT – BEYOND CRUST AND CRUMB can be seen at the VIENNA DESIGN WEEK. This research project by studio chmara.rosinke reconsiders the significance of bread and bread-making as a cultural technique and transformative design practice and was the Austrian contribution at the London Design Biennale 2023.
